Some of my favorites are: Sean Griswold's Head by Lindsey Leavitt; Going Too Far by Jennifer Echols; Eleanor & Park by Rainbow Rowell; Graceling by Kristin Cashore (this is fantasy and part of a series, but the other two books are not about the same people and this one really ties up the story); Eight Keys by Suzanne LaFleur (really MG but SO good!); Keeping the Castle by Particia Kindl (similar to P&P!). These are just a few. Some authors that write good stand alones are : E.Lockhart; Jennifer Echols and Sarah Dessen.
